When dissolved in water, these polymer chains assemble into a complex, interlocking network through hydrogen bonding and electrostatic interactions. This matrix exhibits pseudo-plastic (shear-thinning) flow behavior. Under static conditions (no shear force), the entangled chains yield an exceptionally high viscosity, acting as a physical barrier that prevents dispersed oil droplets from migrating, coalescing, or undergoing phase separation (creaming). The physical mechanism is modeled by Stokes' Law, where settling or rising velocity is inversely proportional to the viscosity of the continuous phase ($\eta$):

How does Xanthan Gum function as an emulsifier if it is not a surfactant?

Xanthan Gum is a structural stabilizer, often called a "hydrocolloid emulsifier." Instead of lowering the interfacial tension between water and oil like a traditional surfactant, it thickens the continuous water phase and creates a polymer network. This network prevents dispersed oil droplets from colliding and coalescing, keeping the emulsion stable over time.

What is the difference between industrial grade and cosmetic grade Xanthan Gum?

Cosmetic and food-grade Xanthan Gums undergo purification to remove trace fermentation residues, heavy metals, and micro-contaminants. They also feature higher clarity and lower odor. Industrial grade Xanthan Gum is formulated for oil drilling, agricultural sprays, and coatings, where high thermal stability and rheology control are required, but high optical clarity and low odor are less critical.

How do you prevent lump formation ("fish-eyes") during dissolution?

"Fish-eyes" occur when the outer layer of powder hydrates too quickly, forming a gel layer that prevents water from reaching the dry center. To avoid this, pre-disperse the Xanthan Gum powder in a non-solvent medium (such as glycerin, propylene glycol, or oil) before adding water under high shear. Alternatively, using a granulated or dispersible grade can help achieve rapid dissolution.

Is Xanthan Gum compatible with anionic and cationic surfactants?

Yes, Xanthan Gum is highly compatible with anionic and non-ionic surfactants. However, because it is an anionic polysaccharide, it can form complexes or precipitate when mixed with highly charged cationic surfactants (such as cetrimonium chloride) under certain conditions. Formulators should run stability tests or use non-ionic co-stabilizers when working with cationic formulations.
